This is one of my favorite risotto recipes that I found in the baby led weaning cookbook. It is super yummy and I have made it many times. The whole family enjoys it and its super easy to make which risotto tends to be very time consuming with lots of stirring and adding of stock. Most of the cooking is done in the oven.
This is the recipe and the only change that I made was I double the recipe but use the same amount of Parmesan so that its not too salty. I also use chicken stock instead of veggie stock.
